It's traditionally enjoyed on weekends with family and friends,
making it a true comfort food. Here’s how you can make it at home:
Ingredients:
- 500g (1 lb) black beans
- 200g (0.5 lb) pork shoulder, cut into chunks
- 200g (0.5 lb) chorizo, sliced
- 150g (0.3 lb) bacon, diced
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon ground black pepper
- Salt to taste
- Water as needed
- For serving: white rice, orange slices, and collard greens
Preparation St
1. Soak the beans: Rinse the black beans and soak them overnight in a large bowl of water.
2. Cook the meats: In a large pot, cook the bacon over medium heat until crisp.
Add chorizo and pork shoulder, cooking until browned.
3. Sauté the aromatics: Remove the meat, add onion and garlic to the pot, and sauté until translucent.
4. Simmer the stew: Return the meats to the pot,
add the drained beans, bay leaves, salt, pepper, and enough water to cover all ingredients.
Bring to a boil, then reduce to a simmer. Cover and cook for about 2-3 hours or until the beans are tender.
5. Final touches: Adjust seasoning to taste, and remove the bay leaves before serving.
Cooking Tips:
- Slow Cooking:
Feijoada is best cooked slowly, allowing the flavors to meld beautifully.
- Consistency: If the stew is too liquidy, remove some beans,
mash them and return them to the pot to thicken the stew.
Serving Suggestions:
Serve your feijoada with steamed white rice, freshly sliced oranges, and sautéed collard greens. This combination balances the richness of the stew and adds a refreshing touch.
