For the Marinade:

2 lbs pork shoulder, thinly sliced

3 dried guajillo chiles, stemmed and seeded

2 dried ancho chiles, stemmed and seeded

2 cloves garlic

1/4 cup white vinegar

1/4 cup orange juice

1/4 cup pineapple juice

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon achiote paste

Salt and pepper to taste


For the Tacos:

Corn tortillas

1 cup pineapple, diced

1/2 cup white onion, finely chopped

1/4 cup fresh cilantro, chopped

Preparation Instructions:

Prepare the Marinade:

Heat a pan over medium heat. Toast the guajillo and ancho chiles for about 2-3 minutes until fragrant.

Soak the toasted chiles in hot water for about 15 minutes until softened.

In a blender, combine the softened chiles, garlic, vinegar, orange juice, pineapple juice, cumin, oregano, achiote paste, salt, and pepper. Blend until smooth.


Marinate the Pork:

Place the pork slices in a large bowl and pour the marinade over them. Ensure the pork is well-coated.

Cover the bowl and let it marinate in the refrigerator for at least 4 hours, preferably overnight for better flavor.


Cook the Pork:

Preheat your grill or a large skillet over medium-high heat.

1 can (14.5 ounces) diced tomatoes

1 cup long-grain rice

2 cups chicken broth

1 pound shrimp, peeled and deveined

Salt and pepper, to taste

2 tablespoons chopped parsley, for garnish

2 green onions, sliced, for garnish

Instructions:

Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken and set aside.


In the same pot, add the sausage slices and cook until browned. Remove and set aside with the chicken.


Add the onion, bell pepper, and celery to the pot. Sauté until the vegetables are soft, about 5 minutes. Stir in the garlic and cook for another minute.


Add the Cajun seasoning and cayenne pepper to the vegetables, stirring well to combine.


Stir in the diced tomatoes, making sure to scrape any browned bits from the bottom of the pot.
