Recipe for Yangzhou Fried Rice 🍚
Ingredients:
- 2 cups of cooked white rice (preferably day-old)
- 2 tablespoons of vegetable oil
- 2 eggs, beaten
- 100 grams of shrimp, peeled and deveined
- 100 grams of roast pork, diced
- 1/2 cup of peas
- 1/2 cup of diced carrots
- 3 green onions, chopped
- 2 tablespoons of soy sauce
- Salt and pepper to taste
Instructions:
Prepare Ingredients: Ensure all ingredients are prepped and ready. Day-old rice is best as it is less sticky.
Cook Eggs: Heat 1 tablespoon of oil in a large wok or frying pan over medium heat. Add the beaten eggs, scramble until just cooked, and then remove from the pan. Set aside.
Stir-Fry Shrimp and Pork: In the same pan, add the remaining oil. Stir-fry the shrimp until pink and cooked through. Add the diced roast pork and cook for another 2 minutes.
Add Vegetables: Add the peas and carrots to the pan, stir-fry for about 2-3 minutes until the vegetables are tender.
Combine Rice: Add the cooked rice to the pan. Stir well to combine with other ingredients. Break up any clumps of rice.
Season and Mix: Pour the soy sauce over the rice mixture, stirring continuously to ensure even distribution. Add the scrambled eggs back to the pan, along with the chopped green onions. Mix everything thoroughly.
Final Touches: Season with salt and pepper to taste. Stir-fry for another 2 minutes to ensure everything is heated through.
Serve: Transfer the fried rice to a serving dish and enjoy hot.
