Barbecue Ribs

 Ingredients:
    • Ribs: 2 racks (about 4-5 lbs) of pork ribs
    • Dry Rub:
      • 2 tablespoons brown sugar
      • 1 tablespoon paprika
      • 2 teaspoons garlic powder
      • 2 teaspoons onion powder
      • 1 teaspoon salt
      • 1 teaspoon black pepper
      • 1 teaspoon cayenne pepper (optional for extra heat)
    • Barbecue Sauce:
      • 1 cup ketchup
      • 1/4 cup apple cider vinegar
      • 1/4 cup Worcestershire sauce
      • 1/4 cup brown sugar
      • 1 tablespoon honey or molasses
      • 1 teaspoon smoked paprika
      • Salt and pepper to taste

    Preparation Steps:

    1. Prepare the Ribs:
      • Remove the membrane from the back of the ribs with a paper towel for better seasoning absorption.
    2. Apply the Dry Rub:
      • Mix all the dry rub ingredients together and rub them generously on both sides of the ribs.
      • Let the ribs marinate for at least 1 hour, or overnight in the refrigerator for deeper flavor.
    3. Preheat Your Grill or Oven:
      • For grilling, preheat to 225°F (107°C). For oven, preheat to 275°F (135°C).
    4. Cook the Ribs:
      • For grill: Place ribs on indirect heat and cover the grill. Cook for about 4 hours.
      • For oven: Wrap ribs in foil and place on a baking sheet. Bake for about 2.5 to 3 hours.
    5. Make the Barbecue Sauce:
      • Combine all sauce ingredients in a saucepan over medium heat. Bring to a simmer, then reduce heat and let it thicken for about 20-30 minutes.
    6. Finish the Ribs:
      • Baste the ribs with the barbecue sauce in the last 30 minutes of cooking.
      • For a charred exterior, increase the grill or oven temperature in the final minutes or briefly place under the broiler.

    Cooking Tips:

    • Keeping the temperature low and slow is key to tender ribs.
    • Applying sauce too early can cause it to burn; it's best to add it towards the end of cooking.

    Serving Suggestions:

    • Serve the ribs with side dishes like coleslaw, cornbread, and baked beans.
    • Garnish with extra barbecue sauce and fresh herbs if desire
