Coq au Vin, meaning "rooster with wine," is a classic French dish known for its deep, rich flavors derived from braising chicken in red wine, typically from Burgundy. This dish is a perfect example of French comfort food and showcases the culinary technique of slow cooking to enhance flavors.Ingredients:
- Chicken pieces (preferably thighs and legs): 6 pieces
- Bacon (thick cut, chopped): 150 grams
- Red wine (Burgundy or any full-bodied red): 750 ml
- Chicken stock: 250 ml
- Mushrooms (sliced): 200 grams
- Small onions or shallots (peeled): 18-20
- Garlic cloves (minced): 2
- Tomato paste: 1 tablespoon
- All-purpose flour: 2 tablespoons
- Fresh thyme: 1 sprig
- Bay leaf: 1
- Salt and pepper to taste
- Butter: 2 tablespoons
- Olive oil: 1 tablespoon
Preparation Steps:
- Preheat your oven to 250 degrees Fahrenheit (120 degrees Celsius).
- In a large, oven-safe pan, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pan.
- Season the chicken pieces with salt and pepper. In the same pan, brown the chicken on all sides in the bacon fat. Remove the chicken and set aside.
- Add the onions and mushrooms to the pan, adding extra olive oil if necessary. Sauté until they are golden brown.
- Stir in the garlic and flour, cooking for a minute before adding the tomato paste, thyme, and bay leaf. Cook for another minute.
- Pour in the wine and chicken stock, stirring well to lift any bits stuck to the pan. Bring to a simmer.
- Return the chicken and bacon to the pan. Cover and place in the oven to braise for about 1.5 to 2 hours, or until the chicken is very tender.
- Once cooked, remove from the oven and adjust seasoning with salt and pepper. If the sauce is too thin, simmer it on the stove until it thickens to your liking.
Cooking Tips:
- Use a good quality wine that you would enjoy drinking, as it forms the base of the sauce.
- If the sauce is too acidic, a small amount of sugar can be added to balance the flavors.
Serving Suggestions:
Serve Coq au Vin with creamy mashed potatoes or a simple loaf of French bread to soak up the delicious sauce. A side of steamed green beans complements the rich flavors well.
